Fried rice is a popular dish in many cuisines, especially in Asian countries. It is a great way to use up leftover rice and turn it into a satisfying and flavorful meal. You can add any protein and vegetables you like, and season it with your favorite sauces and spices. In this article, I will show you how to make a simple and delicious homemade fried rice recipe, inspired by the Indonesian version of nasi goreng.
Ingredients:
- 2 cups of cooked white rice, preferably cold or leftover
- 2 eggs
- 100 grams of chicken breast, cut into small cubes
- 50 grams of shrimp, peeled and deveined
- 2 stalks of green onion, thinly sliced
- 2 tablespoons of sweet soy sauce (kecap manis)
- 1 tablespoon of soy sauce
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 2 tablespoons of cooking oil
Spice paste:
- 3 cloves of garlic
- 4 shallots
- 2 red chilies, seeded and chopped
- 1 teaspoon of roasted shrimp paste (terasi)
How to make:
- To make the spice paste, blend or pound the garlic, shallots, chilies, and shrimp paste in a food processor or mortar and pestle until smooth. Set aside.
- Heat oil in a large skillet or wok over high heat. Add the spice paste and stir-fry until fragrant, about 5 minutes.
- Add the chicken and shrimp, and cook until they change color, about 10 minutes.
- Add the rice, and toss to combine with the meat and spices.
- Add the sweet soy sauce, soy sauce, salt, and pepper. Stir well to coat the rice evenly.
- Make a well in the center of the rice, and crack the eggs into it. Scramble the eggs with a spatula, then mix with the rice.
- Add the green onion, and stir-fry for another minute. Turn off the heat.
- Serve the fried rice with sunny-side-up eggs, pickles, and crackers.
